Chef Víctor Planas, renowned in Spain’s Japanese culinary scene, leads the culinary revival of Hotel Fariones with Kaori, which opened its doors last summer. Blending audacity and Japanese authenticity, the restaurant presents iconic dishes from its successful previous project, Kensei. It offers a unique gastronomic experience with high-quality ingredients such as Japanese Wagyu A5 and local products from Lanzarote in collaboration with Finca de Uga.
At Kaori, Planas aims to go beyond Japanese borders, incorporating risky and bold Asian twists. The menu includes emblematic bites like flame-wrapped scallops and Planas-style royal egg.
