Our philosophy is based on a flavourful cuisine, using the best ingredients sourced from our own land. We work closely with local suppliers and fishermen, and with the Finca de Uga, selecting the best from our land obtained in a sustainable and responsible manner. This enables us to offer a fabulous array of exclusive, superb quality products. Our cooking combines tradition with the most cutting-edge techniques to create unique textures and sensations. Our dishes are a homage to the archipelago’s rich gastronomic tradition. A traditional cuisine, subject to advanced culinary techniques to achieve different textures and experiences, while always remaining respectful of the ingredients and their origins. Our creations showcase the archipelago’s finest raw ingredients. The result is a ground-breaking cuisine based on contrasts, designed to offer our guests a fantastic experience.

Our Chef, Gonzalo Calzadilla, heads up the kitchen that has enabled the Isla de Lobos to gain its first Repsol Sun, in 2020. Creative cooking that has placed the Isla de Lobos restaurant at the epicentre of the Canary Islands’ gastronomic map. In 2019, Gonzalo Calzadilla received one of his most prestigious awards, that of Canary Islands’ Best Chef, in recognition of his work and his passion for cooking.

With Atalaya, we offer a wide-ranging tour of our land’s rich gastronomy, combining the flavours of the sea and the earth. With Tegala, we bring you a shorter, but equally amazing experience. In both cases, we maintain our commitment to sustainability, using local ingredients, products and produce from our own nearby farm, Finca de Uga.
